The Navatta vacuum mixer/evaporator is ideal to produce jams with or without pieces. It features a rotary-coil heat exchanger that allows for high efficiency in heat transfer and rapid heating or defrosting of the product.
Parameters such as temperature, vacuum and coil rotation speed can be set during each cycle step. Flexibility to adapt the process to specific application needs. The de-aeration phase is achieved by sending steam into the rotary coil, while Brix grade control ensures product quality. The aromatic vapours generated are condensed and can be reinserted into the product.
The tank containing the rotary coil makes cleaning easy. The rounded walls and the absence of sharp edges reduce product loss and optimize washing time. Thanks to the higher ratio of heat-exchange surface to volume of processed product, as well as the optimized heat exchange coefficient, the plant offers high-quality end products compared to traditional systems.
